I thought the best thing to do is introduce you to Crispy.
Crispy was a Saddleback cross Large White pig, happily raised on a local plot next to the in-laws house in Kits Coty, Kent.
Following a one-way trip to the butchers in October, Crispy's belly became the star of the show at Christmas dinner, and will be providing many meals during the coming months, including "Trotter Cakes" that are currently cooking as I type!
So thank you Crispy, for a lovely Christmas dinner, some (hopefully) delicious trotters, and my first blog entry.
